    This Blue Monday had some ups and downs and a long to-do list, so this week’s Monday Menu is coming out late.  But here are five meals that will hopefully boost you mood because they are over flowing with veggie goodness.     I am officially back with a new Monday Menu after my holiday time off / adjustment to working again.  This time of year we’re working hard on our goals and resolutions and for many, eating clean and healthy is at the top of the list.     Oh the weather outside is frightful so how about some slow cooker meals to warm you up! Here is this week’s Monday Menu with sweet, spicy and savory slow cooker dishes. Thai Coconut Chicken Soup – Spicy and sweet, this flavorful soup will warm you up on cold days.     Snow has fallen this week so I’m looking for belly warming foods and meals that remind me of the tropics or the beach.  Here’s my Monday Menu for this week.  Beef Stroganoff – One of our favorites and so versatile.  Ground meat or beef strips, condensed soup, sour cream or Greek yogurt, whatever you have on hand.  Pineapple Chicken – Sweet and zesty and great for the slow cooker.  Pour over ginger or jasmine rice for extra flavor.  East Coast Fish Cakes – Dip in tartar sauce or on their own, and add some steamed veggies or coleslaw on the side.     Another week is starting and you’re looking for some quick and healthy ideas for busy evenings. Here is my Monday Menu for this week with some flavorful, healthy meals. Philly Cheese Steak – Sauteed peppers, steak strips and mozzarella, mmm!  Mini Quiche – Buy frozen crust to save time or make your own.  My favorite are mushrooms, ham and cheese. Sausage and Penne – A simple supper on a busy night.  Slice sausage and sautee with veggies like onion, mushrooms, and peppers.  I like skinless sausages for this but summer sausage or kielbasa would work nicely too.     The last week of October is here already. On the agenda this week are Halloween crafts, pumpkin carving and trial runs for costumes. This week’s Monday Menu contains quick favorites and easy slow cooker meals for nights when you’re short on time.     Another beautiful fall week is here and also the start of cold and flu season.  Add lots of Vitamin C and antioxidant rich foods to your meals to help boost your immunity and keep you healthy.
