    Bacon & Egg Potato Salad

    Potato salad is a favorite of mine and a summer staple, from picnics in the park to backyard BBQs. It’s a great dish to beat the heat and prepare earlier in the day, and leftovers make great lunches.  It’s so versatile too, add what you have in your fridge and change it up each time!  I’m not a food blogger so don’t expect precise measurements – I’m a bit-of-this, couple-spoonfuls-of that type cook.     Delicious Campfire Salmon

    When we head out camping for a few days, I usually stick to easy to prepare meals and snacks – sandwiches, fruit and veggies, etc. But I like to do up one nice tasty meal and while we were on our first camping trip to Ross Lake, I made some seriously delicious campfire salmon.   It only took a few ingredients and about 10 minutes, and since we went without a bbq or portable stove, I cooked it right on the grate of the campfire.  My cast iron frying pan (and silicone oven mit for safe, easy removal) were perfect for cooking up this tasty dish.     I love donairs!  When I go back to Nova Scotia, all I want to eat is Pictou County Pizza, Halifax Donairs and some seafood thrown in! There are some great donair shops in Edmonton these days, but it’s always more cost effective to make it at home.  I came across this recipe a while back and made it a few times, but it didn’t make enough for our donair loving family and there wasn’t enough flavor in my opinion.     I can’t believe December is half over already!  It’s been a roller coaster of a month with recitals, Christmas parties, beautiful lights and sensory meltdowns.  After a hard weekend, I have a new found determination to pick myself up and end this month on a strong note.  I promise I will come back to my regular Monday Menu supper ideas, but after a few days of laptop issues and knowing that many suppers this time are year are replaced with events and gatherings with families and friends, I though five potluck items would be great for this week.     It’s Thanksgiving weekend in Canada and families are preparing big meals. There’s bound to be lots left over so what are you going to do with it all?  On this week’s Monday Menu there’s five ideas for using up your leftovers.     Fall is a delicious time of the year.  Gardens and fruit trees are being harvested, kitchens are abuzz with activity making back to school snacks or freezer meals.
