I have been in Edmonton just over 11 years and this is by far the warmest, non-snowiest spring I can remember! We’ve been getting outside as much as we can and enjoying the warm temperatures and extended daylight. Monday Menu: November 23
We finally received our first big snowfall coming today and I’ll probably spend a few days hibernating at home while the roads get cleared off. Here is my Monday Menu for this snowy week. Honey Turkey and Pineapple – I had a few random things left before picking up groceries and decided to toss them together. The end result turned out great and everyone ate it up. I used ground turkey, diced red onion, a can of pineapple tidbits and peas, both drained, honey and seasoning, I added ginger and a bit of nutmeg. Another week is starting and you’re looking for some quick and healthy ideas for busy evenings. Here is my Monday Menu for this week with some flavorful, healthy meals. Philly Cheese Steak – Sauteed peppers, steak strips and mozzarella, mmm! Mini Quiche – Buy frozen crust to save time or make your own. My favorite are mushrooms, ham and cheese. Sausage and Penne – A simple supper on a busy night. Slice sausage and sautee with veggies like onion, mushrooms, and peppers. The last week of October is here already. On the agenda this week are Halloween crafts, pumpkin carving and trial runs for costumes. This week’s Monday Menu contains quick favorites and easy slow cooker meals for nights when you’re short on time. Pulled Pork Tenderloin – Add a tenderloin to the slow cooker and cover in the sauce of your choice. It’s Thanksgiving weekend in Canada and families are preparing big meals. There’s bound to be lots left over so what are you going to do with it all? On this week’s Monday Menu there’s five ideas for using up your leftovers. Shepherd’s Pie – Have a mountain of mashed potatoes left? Corn chowder – End of season corn with onion, potato, and ham or bacon will warm you up on a breezy fall day. You can find a simple recipe here.
